Baked Beet Chips

Ingredients

  • 3-4 medium to large beets. trimmed of greens and roots
  • Olive oil
  • 1 teaspoon sea salt
  • A pinch of your favorite seasoning

Preheat oven to 400 degrees and line baking sheets with parchment paper.

Using a mandolin or knife slice beets into thin rounds (the thinner, the crispier).

Coat the parchment paper with a very thin layer of olive oil.

Spread in a single layer – no overlapping – on the baking sheets. Bake for 10 to 15 minutes on the bottom rack of the oven. Keep an eye on them-beets can go from crips to burnt quickly.

Remove from oven and season to taste. Allow to completely cool on the pan. Once cool, store in an airtight container with a paper towel to absorb moisture at room temperature.
