Directions:

  1. Prep the Bird: Thaw completely and rest at room temperature 1 hour. Remove the neck and bag. Rub 1 stick of softened herbed butter over the breast, wings, and legs, slipping some under the skin. Tuck the wings back under the neck skin.
  2. Season & Set Up: Add a few aromatics loosely to the cavity – this could be left over chopped onion, celery, carrot or even half a lemon. Pour 4 cups stock into a disposable roasting pan. Add additional chopped vegetables to act as a rack and place the turkey on top.
  3. Roast: Bake at 350°F for about 15 minutes per pound. Roast until an instant-read thermometer in the thigh reads 160°F. Rest 20 minutes before carving.

Note: USDA’s official turkey guide uses 325°F, I prefer crispier skin which the higher temp and quicker cook yields. I also find with the butter prep it does not dry out.

Bringing your own roaster frees up the oven for sides. The skin won’t crisp as much; I like to finish the turkey in a 450°F oven for 15 minutes to restore that golden crunch.
