Chunky Monkey Banana Mini Muffins

Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/3 cup honey or sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- Pinch of salt
- 1 cup all-purpose flour
- 1/2 cup quick oats (optional but adds texture)
- 1/2 cup mini chocolate chips
- 1/3 cup finely chopped walnuts (or skip for nut-free)

Preheat oven to 350°F and grease or line a mini muffin tin (24-count).

Mix mashed bananas, butter, honey, egg, and vanilla in a bowl.

Stir in baking soda, salt, flour, and oats. Fold in chocolate chips and walnuts.
